Mochi Donut Recipe
Ingredients:
- 1000g Mochi Donut Powder
- 200g Egg
- 200g All Purpose Shortening
- 150g Vegetable Oil
- 520g Ice Water (3°C)
Instructions:
- Put all ingredients in the mixer. Start on Low Speed for 1 minute, then turn to High Speed for 1 minute 40 seconds (The final texture should be sticky).
- Load the dough into the dispenser. Measure the weight of each donut that gets dispensed (calibrate to 43-46 grams).
- Check the temperature of the fryer (~180°C). Dispense about 9 pieces of donuts in the fryer. Flip each donut and set the timer for 3 minutes.
- Put down the frying net on top of the donuts and lift the frying net every 20 seconds (Do this 3 times during the 3-minute process). Pick up the donuts after 3 minutes is up.
Millet Donut Recipe
Ingredients:
- 1000g Millet Donut Powder
- 200g Egg
- 200g All Purpose Shortening
- 525g Ice Water (3°C)

- Check the temperature of the fryer (~180°C). Dispense about 9 pieces of donuts in the fryer. Flip each donut and set the timer for 3 minutes.
- Put down the frying net on top of the donuts and lift the frying net every 20 seconds (Do this 3 times during the 3-minute process). Pick up the donuts after 3 minutes is up.
