1000g Millet Donut Powder
200g Egg
200g all purpose shortening
525g Ice Water (3°C)
Recipe
1. Put all ingredients in the mixer. Start on Low Speed for 1 minute, then turn to High Speed for 2 minutes. (The final texture should be sticky)
2. Load the dough into the dispenser. Measure the weight of each donut that gets dispensed (calibrate to 50 grams)
3. Check the temperature of the fryer (~180°C) Dispense about 9 pieces of donuts in the fryer. Flip each donut and set the timer for 3 minutes.
4. Put down the frying net on top of the donuts and lift the frying net every 20 seconds (Do this 3 times during the 3-minute process) Pick up the donuts after 3 minutes is up
