Ingredients:  THICKENER (HYDROXYPROPYL STARCH, ACETYLATED DISTARCH ADIPATE, ACETYLATED DISTARCH PHOSPHATE), WHEAT FLOUR, SUGAR, MILK POWDER, BAKING POWDER (DISODIUM DIHYDROGEN PYROPHOSPHATE, SODIUM BICARBONATE, CORN STARCH, MONOBASIC CALCIUM PHOSPHATE), SALT.

Ingredients

1000g Mochi Donut Powder

200g Egg

200g all purpose shortening

150g Vegetable Oil

520g Ice Water (3°C)


Recipe

1. Put all ingredients in the mixer. Start on Low Speed for 1 minute, then turn to High Speed for 1 minute 40 seconds (The final texture should be sticky)

 

2. Load the dough into the dispenser. Measure the weight of each donut that gets dispensed (calibrate to 43-46 grams)

3. Check the temperature of the fryer (~180°C) Dispense about 9 pieces of donuts in the fryer. Flip each donut and set the timer for 3 minutes.

4. Put down the frying net on top of the donuts and lift the frying net every 20 seconds (Do this 3 times during the 3-minute process) Pick up the donuts after 3 minutes is up
